Dr. Fábio Medeiros works in Dr. Marvin Moncada’s laboratory. His primary research focus is related to the development of a simple and straightforward processing strategy to produce nutrient-rich, shelf-stable food ingredients, with an emphasis on the valorization of mushrooms and alternative protein sources. His research interest are mainly related to the valorization of food by-products for the development of novel and nutritious food ingredients and bioprocesses.
