Paul is a doctoral student in Dr. Marvin Morcada’s lab. His research is currently dedicated to optimization of protein extraction from biomasses that are less explored with an emphasis on mushrooms. In addition to the optimization and characterization of biomass proteins, his research also focuses on product development with minimal ingredients to both minimize industrial cost and achieve better familiarity with consumers who want clean labels.
