Lab Personnel:

Dr. Min Li’s overall research interest is in the area of food chemistry with a research focus on product quality and healthfulness. Specifically, he is interested in improving bioavailability and stability of bioactive components (phenolics and carotenoids) by exploring their interactions with macronutrients (carbohydrate and protein) within food matrices. He is also interested in leveraging functionality and nutritional values of food macronutrients through beneficial impacts of bioactive components with the goal of promoting healthfulness of food formulation and processing strategies.
