The polyphenolic flavonoids found in elderberries (Sambucus nigra) have health benefits that are anti-carcinogenic and high in antioxidants. The vitamin C and vitamin E content found in elderberries are capable of enhancing immune system function. Elderberries have been used for colds, asthma, arthritis, and even constipation. Our research showed that the anthocyanins found in elderberries help protect against oxidative stress, thus reducing inflammation. The study looked at the anti-cancer bioactivity of elderberries against multiple stages of cancer cell growth.

1/2 cup dried elderberries
2 cups water
2 tbsp honey
Boil. Steep for 10 to 20 minutes. Drain elderberries. Enjoy hot or cold.
